This coffee was grown by Nectario ZuƱiga at the farm El Oasis. Nectario was born in NariƱo, Columbia, into a traditional coffee farming family. Ever since he was a young boy he was involved in the farm, and today he works alongside his wife, Raquel Rengifo and their sons. As well as cultivating various coffee varieties they produce plantain for local communities and have planted a selection of shade-giving trees. This shade protects the coffee plants from harsh direct sunlight which in turn means slower maturation and increased sugar. To create this speciality coffee, these lovingly grown coffee cherries are aerobically fermented for 24 hours, and then placed inside Grainpro bags for 50 hours maintaining a temperature below 22oC and added CO2. Finally, the whole cherries are placed on raised beds at a temperature below 35oC until the ideal moisture content is achieved. Et voila - the perfect cup of coffee.
